A small brown biscuit with a delicious taste of brown sugar and cinnamon, eaten on St Nicholas' Day in Belgium and Northern France, speculoos adds a spicy sweetness and crunch to the gaufre. An original treat to enjoy with a traditional cup of coffee.

Also benefiting from a career with the greatest confectionners in Europe, he developed the already numerous pastry treats and created the fabulous gaufre filled with Madagascar vanilla, definitively leaving his name to la Maison.
